Team Chicago Comes to Villa Capri in the Turks and Caicos!

Our awesome friends Nick & Sandy were with us this trip and boy it was FUN! Nick walked around with his punch list of things for John to fix around the villa...thanks Nick!

First up was Sandy KILLING it on the Villa Capri standup paddle board. She was awesome.

A fond farewell to our own Dwight The Pup, then back to Chicago!

Nick told us we needed the necessary 'Don't Dive' sign. We didn't want one of those random signs you just get at any store that look generic but we really don't want people to dive off the dock into Chalk Sound. 

We had a nice visit paid to us at the Island Fish Fry by Shaquille! He danced with a cute little girl on stage! If you go stop by our two favorites: Kalooki's for fish or bbq chicken wraps and Mr. Mojito. Need I say more?

Finally Sandy made a TRUCKLOAD of her famous and awesome salsa that her kids just love, and we do too! It's going to be a regular for us at Villa Capr!

Here's her recipe, you can get all of the ingredients at the IGA right on Leeward!

Ingredients:

  • 3 cans black beans, drained
  • 2 cans corn, drained
  • 2 cans Rotel tomatoes undrained
  • 1 bunch green onions, cut small
  • 1 red onion diced (optional)
  • 1 bunch of cilantro, rinsed and chopped
  • 1/2 cup apple cider vinegar
  • 1/4 cup olive oil
  • 1 tsp. salt
  • 2 tsp. cumin
  • 1/2 tsp. black pepper

Rinse beans and corn (not tomatoes).  Mix all ingredients.  Let sit at least 2 hours.  Enjoy with tortilla chips or over grilled chicken breasts topped with feta cheese on toasted buns as a summer sandwich!
